i wouldn't marinade,but depending on how good your butcher is you may have to %26gt;%26lt;. place the sausage in a plastic zip-loc bag, pour in a bottle of beer, i like using good, dark beer but do it to your taste, some fresh mixed herbs, onion (diced or rings) and a desert spoon or so of salt. if you like garlic you can add that too, crushed works best, seal it and leave in the fridge for at least 4 hours, you'll want to start your fire when you put the meat in the fridge, so you'll have a good charcoal base when it comes time to cook. use a wire grill at least 6'; over the embers, place the sausage on and cook like normal, pour the jiuce from the bag over them as you cook them. do not pierce the sausages.


depending on the size of the sausages and the heat in the coals it should take at least half an hour to cook em, i would reccomend this as the minimum ammount of time to cook any meat. slow cooking makes for good flavour if it's done right.Best way to cook deer sausage?
brown the sausage add onions green peepers and already cook potatoes add a lil oil brown mixture then add 8 eggs %26lt; whisked with a little milk and water%26gt; put in the oven at 350 for 40 minutes its called Mountain man breakfast. you can also add a bit of cheese the last 10 minutes yumm
I love cooking it with scrambled eggs for breakfast tacos...
BBQ outdoor with pepper and onion...good deer sausage.
